Today may be a busy day


Its a little too overcast to get really good pictures right now, might go out later this afternoon. But I sat around doing this instead of cleaning my house.

A little something


I borrowed my neighbors camera last night and finally ventured out around the neighborhood (well..3/4 of a mile) and took a few pictures, and made a little layout. I honestly can't tell you where I got the background or elements but I will give credit to all digiscrappers out there, and thank you sooo much for sharing your work.

The milkshake and sandwich are actually both off of tv commericials I just snapped a picture.

The rain is *supposed* to be making its way here today, so I'm gonna go see if I can't snap some more pictures of the neighborhood. Post more later!

It's to early to be awake...

Seems like I'm getting a jump start on my day today, so I thought I'd post some more recipes.

Greek Dressing :

5 cups olive oil
1 cup red wine vinegar
1/3 cup garlic, minced
juice of one lemon (or just kinda eyeball lemon juice...you don't need alot)
3 tablespoons salt
2 tablespoons black pepper
1 tablespoon hot sauce
1 cup dried oregano

This make a good amount of dressing, but it holds in the fridge for a good while.


My favorite chicken salad :

5 # cooked chicken tenders No seasoning, just throw the chicken in a 375*F oven, cook til done then cool. I usually pop the chicken into the food processor after its cool, I leave a few decent size chunks tho.
32 oz. mayo
1/3 cup roasted garlic
1/4 cup caribbean jerk seasoning. * There isn't really enough of this to make a huge difference, so you can leave it out..or substitute for red pepper flakes
2 cups fine diced celery
1/3 cup dried basil
salt and pepper to taste

Candyland.


I got bored last night and really wanted to play around with my candyland scrapbooking pieces..so I made a page of Kaiya. I haven't put any writing on it, only because I just didn't want to last night, so technically..its not finished

It has arrived.

I haven't had a chance to scale it down yet..but here's that broccoli soup recipe.

1 case broccoli
5# onion
1/2 c minced garlic
2T white pepper
3 T salt
6 gal. water
1 1/4 # chicken base
2 c Parmesan cheese, shredded
2 # margarine
4 c flour
1/2 c white wine
6 qts heavy cream
4 c dry roux

The person who gave me the recipe cuts the stalks off the broccoli, boils them and then purees them and mixes them into the soup. Depending on how tender you want the broccoli is really how long you cook it. I'll try to scale it down in the next few days and repost it.

1. I call my mother twenty-thousand times a day...even when I lived 20 minutes up the road...

2. I hate looking up when I'm on the ground.

3. I love the beach, but hate the sand and the water.

4. I hate shopping.

5. I'm VERY opinionated.

6. I can't stand pictures hanging on a wall that are not straight. I don't care how long I have known you...I WILL fix it.

7. I can't stand to cook ground meat.

8. I have a problem with correcting misspelled words. (Just ask mom...)

9. I love to have a heated debate.

10. After Scott's grandpa's birthday party...my hair might be blue. :-p

And as far as a certain broccoli soup recipe..I'll post that later today.

Honey Vanilla Chicken

Prep Time :15 min
Cook Time :10 min
Ready In :45min

INGREDIENTS

  • 3 tablespoons soy sauce *I added just a bit more*
  • 1 tablespoon orange juice
  • 1 teaspoon hot pepper sauce, or to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon light brown sugar *I added an extra 1/2*
  • 1 tablespoon honey * I used 2 tablespoons*
  • 1/2 teaspoon minced garlic
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon sesame oil
  • 1/2 cup vegetable oil * I found 1/2 cup to be a bit to much...*
  • 2 pounds skinless, boneless chicken breast meat - cut into strips

DIRECTIONS

  1. Stir together soy sauce, orange juice, hot pepper sauce, vanilla, brown sugar, and honey until dissolved. Season with minced garlic, garlic powder, and Italian seasoning. Whisk in sesame oil and vegetable oil until combined.
  2. Toss chicken with marinade, cover, and refrigerate for at least 20 minutes.
  3. Adjust oven rack to its top position, and turn oven on to Broil.
  4. Place chicken into a baking dish or baking sheet. Broil until golden brown, 5 to 8 minutes. Turn chicken over, and continue broiling until no longer pink, about 5 minutes more.

I cooked the chicken as it says above, but I didn't leave any liquid in the baking pan, so the chicken dried out. I made a sauce with the marinade and served with chinese egg noodles. Next time I make it, I'm going to just cook the chicken on the stove in the marinade and see how it turns out.
